Durian (Durio zibethinus Murr.) is one of the authentic tropical fruits in Indonesia with a high popularity for consumption by public. Many local varieties are originating from North Sumatra, which Bintana variety as major cultivar Medan City. Like other fruits, durian seeds mostly neglected and disposed only wastes. It reported that starch content may be utilized converted into valuable products food processing. Heat moisture treatment (HMT) physical modification technique to convert natural granule structure resistant during gelatinization process temperatures. The purpose this study was evaluate effect HMT based on physicochemical properties. results indicated seed modified Moisture Treatment method displayed better properties than starch, includes (4.70%), ash (0.17%), pH value (5, 99), water absorption capacity (8.10%), oil (9.10%), solubility cold (14.83%). can then applied use temperatures
